Your creations exist somewhere between haute couture, architecture, and pâtisserie. At what point did you realize cake design could transcend dessert and become a true art form?

It is true that pastry often draws inspiration from architecture and haute couture. However, I see this comparison not only from an aesthetic perspective, but also in terms of the creative process itself. Manual craftsmanship, technical expertise, and a deep respect for proportions and balance are fundamental elements shared by all three disciplines. I always approach each creation as a complete work, ensuring that every piece is unique and fully realized in every detail. We apply the same philosophy when developing our recipes. Beyond appearance, each cake must be perfectly balanced in terms of flavor, texture, and overall harmony. For me, artistry exists when beauty and taste are conceived together as one.

Many of your works feel deeply architectural and almost cinematic in scale. What inspires your visual language when conceptualizing a new creation?

I always begin by considering the venue and the overall wedding design. It is important that every creation feels perfectly suited to its environment. Sometimes a very large cake is justified by the scale and proportions of the venue. In other situations, a smaller cake can be far more elegant, sophisticated, and impactful. I am also inspired by the many talented professionals involved in exceptional events: graphic designers, florists, event designers, and the great fashion houses. A wedding cake should never be viewed as an isolated element. It becomes part of a larger story and contributes to the overall visual experience of the celebration.

Your cakes are known for their extraordinary level of craftsmanship and detail. In an age of speed and mass production, what does preserving artisanal savoir-faire mean to you personally?

In France, our company has been recognized with the prestigious Entreprise du Patrimoine Vivant label, which honors businesses that preserve rare and exceptional craftsmanship. This recognition reflects our commitment to maintaining the highest standards. For this reason, we deliberately limit the number of commissions we accept each year. It allows us to dedicate the necessary time and attention to every project rather than producing work on a larger scale. I am fortunate to rely on a team that I have personally trained, and whose members have worked alongside me for many years. The trust, synergy, and shared commitment we have built together are essential to delivering the level of excellence our clients expect. Clients come to us seeking French craftsmanship and savoir-faire. We have a responsibility to honor that trust and never disappoint.

You’ve created pieces for some of the world’s most exclusive celebrations, from French châteaux to palaces abroad. How do you ensure each creation still feels intimate and emotionally personal to the client??

I always insist on meeting my clients personally and working with as few intermediaries as possible. It is essential for me to understand directly who they are, what they love, and what matters most to them. Every couple has its own story, culture, and vision. Their expectations can be completely different from one another. My role is not to impose my own style, but rather to adapt and create something that reflects their dream cake, interpreted through my artistic perspective and expertise. The most successful creations are those that feel deeply personal to the couple while still carrying our signature craftsmanship.

There is a strong sense of romance and ephemerality in your work. These monumental creations exist only for a moment before disappearing. What draws you to creating beauty that is intentionally temporary?

I believe that this fleeting nature is part of the magic. A wedding cake should be beautiful because it is meant to create a lasting impression. It should leave guests with both a visual memory and a memorable tasting experience. My greatest wish is that, years after the celebration, the couple and their guests can still remember the wedding cake as one of the highlights of the event. Even if the cake itself is temporary, the emotions and memories it creates can endure for a lifetime.

Beyond the visual spectacle, your work also emphasizes taste and French pastry tradition. How do you balance technical artistry with the emotional experience of flavor and memory?

For me, this balance comes quite naturally because my background is deeply rooted in traditional French pastry craftsmanship. I have worked both in Michelin-starred restaurants and in some of France’s most respected pastry houses. This experience gives us access to the full richness of French pastry techniques and recipes, allowing us to create cakes where taste is never sacrificed for aesthetics. We are also fortunate in France to have access to exceptional ingredients: outstanding butter, cream, flour, and many other high-quality products. These seemingly small details make an enormous difference and contribute directly to the quality and authenticity of our cakes. Ultimately, a beautiful cake may capture attention, but it is flavor that creates emotion and leaves a lasting memory.
